This dessert is inspired by my favorite matcha drink! I love the earthy flavor of matcha, especially when it's mixed with creamy milk and a splash of blueberry syrup (my favorite!). Coffee gives me the jitters, so matcha lattes are the perfect way to start my day. The matcha pairs so well with the sweet and tangy blueberry, and the bananas add just the right amount of sweetness. It’s a simple yet delicious way to kick off the morning!

Who doesn’t love banana bread? It’s sweet, chewy, dense, and the perfect treat to enjoy with a cup of tea. This recipe brings those classic flavors to life with two special ingredients: blueberry compote and matcha powder. The matcha gives the bread its vibrant green color and balances out the sweetness of the bananas and blueberries. The blueberry compote, swirled through the bread and spread on top, adds a gooey texture and a tangy kick. Topped with chopped cinnamon pistachios and white chocolate, it’s a delicious twist on a beloved classic.

WHAT IS MATCHA?
Matcha is a finely ground powder made from specially grown green tea leaves, primarily from Japan. Unlike regular green tea, the leaves are shade-grown to enhance their flavor and nutrient content, giving matcha its vibrant green color and rich, earthy taste. Traditionally used in Japanese tea ceremonies, matcha has gained popularity worldwide for its unique flavor and health benefits. It’s now a favorite ingredient in a wide range of drinks and desserts, from creamy lattes to cakes, ice creams, and even smoothies
HOW TO MAKE THIS DESSERT
STEP 1: Preheat your oven to 350°F and line a loaf pan with parchment paper, buttering the sides and sprinkling brown sugar on them.
STEP 2: To make the blueberry jam, place the blueberries and sugar in a small saucepan over medium heat. Stir occasionally, allowing the berries to break down and the mixture to thicken, about 10-12 minutes. Be sure to watch carefully to avoid overcooking, as it should reach a jam-like consistency, not too runny. Once thickened, remove from heat and set aside to cool.
STEP 3: Next, prepare the banana bread batter. In a large bowl, mash the bananas with a fork or potato masher until smooth and soft. Add the eggs, sugars, softened butter, Greek yogurt, and vanilla paste to the mashed bananas and mix until everything is well combined.
STEP 4: In a separate bowl, sift together the almond flour, matcha powder, and baking soda. This step ensures the dry ingredients are evenly distributed and helps prevent clumping. Gradually fold the dry mixture into the wet ingredients, stirring until fully combined. Once incorporated, gently fold in the white chocolate chips.
STEP 5: Now, assemble the banana bread. Pour half of the batter into the prepared loaf pan, spreading it evenly. Spoon half of the cooled blueberry jam over the batter, and use a knife to gently swirl it into the batter, creating a marbled effect. Add the remaining batter and spread it out evenly. Finally, spoon the rest of the blueberry jam on top and swirl it again for an even more marbled look.
STEP 6: Bake in the preheated oven for 45-50 minutes, or until a knife or toothpick inserted into the center comes out mostly clean, with just a few crumbs sticking to it. While the bread is baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, matcha powder, vanilla paste, and almond milk until smooth and thick. You can adjust the consistency by adding more almond milk if needed.
STEP 7: Once the banana bread is done, remove it from the oven and allow it to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Once cooled, drizzle the matcha glaze generously over the top of the bread. Garnish with crushed pistachios and more white chocolate. You can serve it warm or refrigerate it to enjoy later.

- Preheat the oven to 350 degrees Fahrenheit and line a loaf pans with parchment paper. Butter the sides and sprinkle brown sugar on the sides.
- Make the Blueberry Jam: In a small saucepan, cook down the blueberries and sugar until a jam begins to form. Do not overcook so as to make the jam runny.
- In a large bowl, combine the wet ingredients: (a) mash the bananas until soft; (b) add the eggs, sugars, butter, Greek yogurt, and vanilla paste.
- Next, combine the dry ingredients: sifted almond flour, matcha powder, baking soda. Add the dry ingredients to the wet mixture and combine until well incorporated.
- Add the white chocolate chips to the mixture and mix well.
- Pour half of the batter into the loaf pan. Pour half of the blueberry jam on top and swirl around with a knife. Add the remainder of the batter and spready evenly. Scoop the remaining jam and swirl on the top.
- Bake in the oven for 45-50 minutes, or until knife inserted comes out mostly clean.
- While baking, make the glaze by combining the powdered sugar, matcha powder, vanilla bean paste, and almond milk until thick glaze forms.
- Allow for the banana bread to cool and take out of the loaf pan. Drizzle the glaze all over the loaf. Serve warm or set in the fridge and serve later
