Berry and Brownie Ice Cream, a twist on my mom’s favorite Cold Stone order: chocolate ice cream with fresh strawberries and brownie bites. I’ve swapped the chocolate for vanilla to let the rich brownie chunks stand out and make the strawberries pop. have also added raspberries to the mix. My mom is an ice cream lover, and our after-school Cold Stone trips were always a treat. While I usually went for cake batter ice cream loaded with candy and sprinkles, my mom kept it simple with chocolate and fruit. I’d like to thin my order has evolved to something more refined, like hers, let’s be real—I’m still ordering like a kid with a serious sweet tooth.

My Berry and Brownie Ice Cream blends creamy vanilla with rich brownie chunks and fresh strawberries. The vanilla provides a smooth backdrop, letting the brownies shine, while the strawberries and raspberries add a fresh, sweet contrast. It's the perfect combination of indulgent and refreshing in every scoop.

Dark Chocolate: Ditch the basic semi-sweet chocolate chips and upgrade your ice cream with your favorite high-quality chocolate bar. My go-to is Lindt’s Sea Salt Dark Chocolate for its rich, deep flavor and the perfect touch of saltiness from the flaky sea salt.
Brownie Bites: This recipe uses store-bought brownie bites, which are quick, easy to chop, and work perfectly. However, if you’re feeling extra, you can make brownies from scratch, chill them in the fridge to firm up, and then chop them into chunks to fold into the ice cream for an even richer texture and flavor.
Berries: This recipe features a mix of fresh strawberries and raspberries, but feel free to get creative with your favorite fruits—cherries, blueberries, blackberries... the options are endless. If you decide to use juicier berries like raspberries or blackberries, I recommend chopping them first and freezing them before adding, to avoid excess moisture in the ice cream.

- Line with parchment paper either a cake, bread or brownie pan (something with some depth to scoop the ice cream easily) and set aside.
- Whip the heavy cream in a mixing bowl with an electric hand mixer or whisk until medium peaks form (should be light and fluffy, but not completely stuck to the bowl). Fold in the vanilla extract and pinch of salt.
- Pour the sweetened condensed milk and fold in gently until everything is combined and smooth in texture. Add the chunks of strawberries, raspberries, and brownie bites until well incorporated into the batter.
- Pour the ice cream mixture in the line pan(s) of choice and freeze for minimum of 8 hours.
- Scoop, serve, and enjoy!
