The inspiration for these Blackberry White Chocolate Scones comes from Tru Bru, my favorite cafe back in my hometown. It’s one of those cozy spots tucked away on a quiet corner, where the smell of freshly brewed coffee and baked goods fills the air. But it was always the scones that stood out. They were perfectly crumbly with a soft, buttery interior and topped with a light, sweet glaze that made each bite irresistible.

WHAT IS A SCONE?

The process of making a scone involves blending dry ingredients (like flour, baking powder, and sugar) with cold butter until the mixture resembles coarse crumbs. Wet ingredients are then added, creating a dough that is gently mixed to avoid overworking it. The dough is shaped into rounds or wedges, then baked until light and golden.
While classic scones are often served plain or with fruit, they can also be flavored with ingredients like chocolate, spices, or herbs. In the UK, scones are a staple at afternoon tea, typically served with clotted cream and jam. INGREDIENT AND BAKING NOTES
The Blackberries: When prepping the blackberries, chop them into small pieces. Spread them out on a baking sheet in a single layer and freeze for about three hours. Freezing the blackberries helps prevent their juice from splattering when incorporated into the dough, ensuring a cleaner mixing process.
The Butter: Keep your butter chilled in the fridge until you're ready to use it. When it's time, quickly shred the cold butter using a grater. This method ensures the butter stays cold, which is essential for achieving a flaky texture in your scones. Grating the butter also allows it to blend seamlessly into the dry ingredients, promoting a tender crumb.
Wet Ingredients: In a separate bowl, whisk together the cream and egg until well blended. Pour this mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix the dough to ensure your scones remain tender and light. Gently add in the blackberries and white chocolate
Rolling the Dough: Transfer the dough to a floured surface. Gently press it into a square approximately 1 inch thick. Cut the dough into 9 to 12 equal squares, depending on your preferred size. Place the squares onto a prepared baking sheet. Brush the tops with an egg wash and sprinkle with granulated sugar. Bake for about 20 minutes, or until the scones are golden brown.

- Preheat the oven to 375 degrees Farenheit. Line a cookie tray with parchment paper and set aside.
- In a large mixing bowl, mix together flour, sugar, and baking powder.
- After chilling in the fridge, quickly shred the butter with a grate and combine with the dry ingredients until crumbly.
- In a separate bowl, beat together the egg and heavy cream. Add this wet mixture to the dry mixture and combine until dough begins to form, but DO NOT OVERMIX.
- Add the chopped blackberries and white chocolate chips and incorporate well into the dough.
- Roll out the dough onto a floured surface and form a 1-inch-thick square. Cut 9-12 equal squares or triangles and place them onto the line baking sheet.
- Bake the scones for 20 minutes, or until golden brown. While waiting, make the glaze.
- In a small bowl, combine the powdered sugar, whole milk, and vanilla bean paste until a thick glaze forms. Set aside in the fridge until scones are ready.
- Take the scones out and allow to cool for 20 minutes. Drizzle the glaze over and allow to set. You can enjoy these cold or warm them up and serve with butter or jam and your favorite afternoon or morning tea!
