My best friend and I indulged in this sweet summer classic back in our hometown, and could not get over the fresh strawberry flavor, rich chunks of cheesecake, and the fact that we didn’t use an ice cream maker! That’s right, this recipe is equipment-proof and calls for only five simple ingredients. This is the perfect treat for your next barbecue or to cool down on those scorching summer days.


MAKING ICE CREAM WITHOUT A MACHINE

I used to be intimidated by making ice cream at home because I thought there were all these unique ingredients, and I didn’t have a fancy ice cream maker. Wrong! Turns out you can make just about any type of ice cream with just two base ingredients: heavy whipping cream and sweetened condensed milk. From there you can create your favorite flavors by adding in various toppings, like the strawberries and cheesecake chunks for this recipe. If you’re wondering how those ingredients actually become ice cream, it is two simple steps of: (1) whipping the heavy cream until its light and fluffy with an electric hand mixer (okay I lied, not entirely equipment free) or a whisk if you want that extra cardio; and (2) folding in your sweetened condensed milk and choice of flavoring. After that, it’s as simple as pouring the mixture into a bread pan under parchment paper and popping it into the freezer. The eight-hour waiting period is probably the hardest part, so I recommend doing this before bed, so when you wake up its ready to go. Ice cream is the breakfast of champions, right?

  1. Line with parchment paper either a cake, bread or brownie pan (something with some depth to scoop the ice cream easily) and set aside.
  2. In a medium saucepan, cook down the strawberries and sugar until it starts to form a jam, but is not completely liquid. Take the jam of stove to cool down for 10 min and blend until completely liquid.
  3. Whip the heavy cream in a mixing bowl with an electric hand mixer or whisk until medium peaks form (should be light and fluffy, but not completely stuck to the bowl). Fold in the vanilla extract and pinch of salt.
  4. Pour the sweetened condensed milk and liquified strawberry mixture and fold in gently until everything is combined and smooth in texture. Add the chunks of cheesecake until it is mixed in throughout the ice cream batter.
  5. Pour the ice cream mixture in the line pan(s) of choice and freeze for minimum of 8 hours.
  6. Scoop, serve, and enjoy!
